Chicken Salad Sandwiches (These were served at our wedding reception, Brittany Hyatt)

2 c. canned chicken
½ c. blanched, slivered almonds
1 stalk celery, diced
1 c. red grapes, cut into fourths
1 ½ c. mayonnaise
3 TBSP lemon juice
¼ tsp pepper
¼ tsp salt
18 croissant rolls

Blanch almonds in skillet until barely golden brown.  Mash big chunks of chicken up into little shreds.  Mix all ingredients well. Cut croissant roll in half.  Spread chicken salad on roll; put top back on.
