Oven Baked Stew (Geneve Johnson's recipe)

1 Tbl. flour                           3 or 4 potatoes, cut to bite size
1 ts. salt                              4 carrots, cut to bite size
dash pepper                        1 lb stew meat, cut up
1 Tbl. shortening                  2 cans tomato soup
1 can water                         1 cup onion, chopped
1/2 ts. basil
 
Combine flour, salt, pepper, coat meat with it.
Brown meat in hot shortening in small dutch oven (I just do it in the pot I bake it in)
Add water, onion, soup, basil.
Cover & bake at 375* about 1 hour.
Add potatoes, carrots, bake 1 to 1 1/2 more hours, until tender.
 
 
 
Baked Cheese Chicken
 
8-10 chicken breasts
20 soda crackers, crushed fine
1 1/2 cups grated cheddar cheese
1 sq. butter, melted
 
Mix crackers and cheese together. Dip chicken in butter, then cover completely with cheese mixture.  Put in ungreased baking dish and cover securely with foil.  Bake long & slow -- about 275* about 2 1/2 hours.
