Hawaiian Haystacks (Brenda Lisa’s recipe)

2 cans of low-fat cream of chicken soup
½ c. chick broth
3 c. cooked, chopped chicken
1 c. fat free sour cream
1 c. skim milk
4 c. cooked brown rice

Toppings:
Chow mein noodles
Diced tomatoes
Chopped green peppers
Low-fat grated cheese
And whatever else you want…

Combine soup, chicken broth, chicken, sour cream, and milk in a pan to make sauce.  Stir to blend.  Simmer about 8 to 10 minutes, until heated through.  Serve over rice, and top with whatever toppings you like.
