My family serves this every Thanksgiving. All of the layers can be made ahead of time, but it tastes better if you wait until just before serving to assemble the dessert.
Crust:
2 c. mashed pretzels
3 T. sugar
¾ c. melted butter
Mix ingredients, press into a 9x13, and bake at 400 for 5 min.
In a separate bowl, mix:
8 oz cream cheese, softened
1 c. powdered sugar
1 small can crushed & well-drained pineapple
Add 8 oz Cool whip.
In another bowl, mix:
2 small pkgs raspberry jello
2 c. boiling water
1 ½ c. cold water
Add 1 small pkg of frozen raspberries.
Let set in refrigerator until softly set. Stir.
Put the cream cheese layer followed by the jello layer on top of the crust. Serve. VERY good.
